Soak the beans in plenty of water over night. The following day drain the beans and wash them thoroughly then place in a large pot with plenty of water. Bring the mixture to a boil and boil for about 60 minutes. Meanwhile wash the rice and add to the beans in the pot, along with more water. Allow the mixture to boil for about 40 minutes (or until the beans are tender). Allow the water to evapourate so that you have a thick consistency. Season with salt and your waakye is ready to eat. For a main course serve with a stew of vegetables and fish.
You may add any flavourings you desire to the Waakye.
